One of the most beloved summer holidays is approaching and we are ready for it! We’re excited to celebrate the great country we live in. Living in a rural community, we feel lucky to have so many activities surrounding our small towns. Around this time of year, we usually have many parades, hill climbs, street dances, and fireworks to enjoy.
Kim, Dr. Roger Amundson’s wife, says one of her favorite Independence Day memories is celebrating the holiday in the 1960’s by roasting marshmallows and hot dogs. The best part? Enjoying a Coke straight from that classic glass bottle.
Speaking of roasting delicious meals, we thought we’d share our favorite easy recipe for the grill because it’s not only perfect for this holiday, but also for the summer!
Shish Kabob Marinade
1 cup soy sauce
1/2 cup pineapple juice
1/2 cup white vinegar
1/2 cup brown sugar
2 teaspoons salt
1/2 teaspoon garlic powder
1. Bring all ingredients in a medium saucepan to a boil over medium heat and let cool slightly.
2. Cut beef or pork tenderloin into 1 1/2 chunks and marinate for at least 4 hours.
3. Skewer meat along with cut peppers, onions, small tomatoes and partially cooked small potatoes if desired.
4. Grill for approximately 10 minutes. Enjoy!

While we’ll be celebrating America this Wednesday, we know Canada Day just passed and want to say that we appreciate our Canadian neighbors, particularly those from Winnipeg, Manitoba. We absolutely love it when they come to our city to shop and play, and they are always welcome.
